Malva pudding: a quintessential South African dessert

​Growing up partially in South Africa, and to South African parents, there was no shortage of delicious food to go around. However, a firm favourite, and I think many of us would agree, is the classic Malva pudding. The origins of the dessert are debated, but one thing is clear: this quintessential pudding was one of my mother’s showstoppers. Try it for yourselves!
Ingredients:
Cake
  • 250g brown sugar
  • 1 egg
  • 15ml apricot jam
  • 250g flour
  • 5g bicarbonate of soda
  • 20ml butter
  • 5ml vinegar
  • 250ml milk
Sauce
  • 250ml cream
  • 200g white sugar
  • 125g butter
  • 125ml milk
  • 5ml vanilla extract
Method
  1. Beat egg and brown sugar together until light and creamy.
  2. Mix in apricot jam.
  3. Sift flour and bicarbonate of soda together, then combine with milk.
  4. Add all ingredients together.
  5. Bake for 45 mins at 180 degrees.
  6. Mix all sauce ingredients together and heat until boiling.
  7. Pour the sauce over the pudding as soon as you take it out of the oven.
